Perfect on the go protein snack!

I was clearly on a healthy sugary alternative kick with these recipes. If you like the taste of peanut butter and you are someone like me who is super busy and on the go (yes, even with being stuck at home!) then these are perfect. I often push back eating when I am busy and in the middle of something which usually means that I hit a breaking point and get SUPER hungry which also means that I just want to eat anything in sight even if it’s super unhealthy. I love having pre-made, easy snacks or meals that I can just quickly grab eat up or have at my desk and snack on while working. These protein bars definitely do the job!

PB Cookie Dough Protein Bars Recipe

1 cup of rolled oats

1/4 cup of oat milk (any milk will do)

1/2 cup of peanut butter

2 tablespoons of coconut oil

4 tablespoons of maple syrup

1/3 cup of protein powder of choice (I used Naked Harvest Thrive plant based protein in peanut butter brownie!)

2 tablespoons of vanilla extract

1/2 – 3/4 cup of chocolate chips of choice

Blend oats to fine consistency, Mixed blended oats and protein powder together. In different bowl mix the peanut butter, maple syrup, vanilla extract & coconut oil. Once mixed together, slowly start adding the oat and protein mix. Mix everything together and add the chocolate chips. Mixture will be pretty thick and dense, try ‘folding’ the mix and chocolate chips or if you’re okay with it, use your hands!

Line dish with parchment paper, add the mixture and spread out to desired thickness. Best to use a square or rectangle dish so you can cut it up into bars later.

Leave in fridge for at least 2 hours.
