Refined sugar free, vegan + DELICIOUS

Okay, so if you’re anything like me then hearing black beans and brownies in the same sentience just does not sound appealing… at all. When I first saw a black bean brownie recipe I was skeptic to say the least. In my experience almost all the healthy versions of sweet treats I love have never lived up to much of anything BUT that all changed when I decided to get over myself and give it a try! Not only was it pretty easy to do but it ACTUALLY tasted so good, so much so that I ended up eating it all in about 2 days. Something this good made with whole, healthy ingredients has to be shared. Black Bean Brownies Recipe

1 can of black beans (make sure you drain them and rinse them really well).

3 tablespoons of cocoa powder (you can add more if you like it very rich and chocolatey).

1/2 cup of rolled oats

a pinch of salt

1/3 cup of maple syrup (more or less to taste)

1/4 cup of coconut oil

1 tablespoon vanilla extract (pure is best!)

1/2 teaspoon of baking powder

3/4 cup of chocolate chips of choice

1/2 cup of crushed walnuts

Pre-heat oven to 350 degree. Add oats to a blender and blend until it is fine, remove from blender and set aside. Add black beans, cocoa powder, coconut oil, maple syrup & vanilla extract to blender and blend until mixture becomes smooth and similar to cake batter in consistency.

Once all blended add the salt and baking powder, blend.

Remove mixture from blender and put into larger bowl. Mix in the blended oats, chocolate chips and walnuts.

Line dish with parchment paper and put in the oven for 20-30 minutes depending on oven. Poke toothpick or knife through to ensure they are done cooking.
